fly the coop!
So I got a craving last night - for hot chicken. Living in the city, I can pretty much walk to some of the yummiest restaurants that Chicago has to offer and one of those places is Fly the Coop which makes awesome hot chicken. Unfortunately I just flew back from North Carolina and I am self quarantining for 14 days and I have 9 days left. Now, I am one of those that likes to cook everything at home to avoid processed foods and foods that I don't know what goes into them. I have an autoimmune condition (Rheumatoid Arthritis) which I got diagnosed with when I was 39 so this is something that is important for my health. Having said that, hot Nashville style chicken is hot Nashville style chicken! Sometimes you just need the deep fried version to sooth your soul!
However, back to the real world...I had to come up with a version of my own since I couldn't go out. I had chicken legs in my fridge so that is what I used. Obviously, if I am cooking at home, I wasn't about to deep fry anything so that meant using my Air Fryer. I was down to a scant amount of Frank's Hot Sauce (because I use it liberally) but I had just enough to make this work.
I also used this as another learning moment and put together another video. I had promised my friend that I would post my tandoori chicken recipe (with video) next but that's like my absolute favorite recipe since I use that chicken in a lot of my recipes (creative leftovers ya'll!) so I want to do a whole lot better with my videos than I am now. There are hundreds of people out there making these cooking videos and I just need to figure out the trick how to make them look nearly as professional. So I did what any crazy person does -- I ordered some things on amazon to help!! Lights, camera and action. Well, lights at least - I am still using my phone for these videos so don't need the rest just yet.
Anyways, until then, I will keep making videos and you'll see - hopefully they will keep getting better.
Buffalo Chicken Legs (Air Fryer Style)
5 full size chicken legs with skin (approx 2lbs)
1 Tbsp oil
1/2 tsp garlic powder
1/2 tsp salt
Freshly ground black pepper
1/4 cup Frank's Hot Sauce (or you hot sauce of choice)
3 Tbsp melted butter
Preheat your air fryer at 400F for 5 minutes
Pat down your chicken well so that they are as dry as possible. In a big bowl, add your oil, garlic powder, salt and pepper. Toss the chicken legs to coat them thoroughly.
Once preheated, add the chicken legs in a single layer to the basket. Cook in air fryer at 400F for 12 minutes.
Flip the chicken and cook again at 400F for an additional 5 minutes.
In the meantime, add hot sauce and melted butter to a bowl. Mix well.
Once the chicken is finished cooking, add them carefully to the bowl with the sauce and coat well. Add back to the air fryer basket and spoon some of the leftover sauce directly on the chicken to maximize flavor.
Cook one last time at 400F for 5 minutes to bake in the flavor.
Voila! Enjoy with some carrots, celery and some homemade ranch dipping sauce made with greek yogurt, lemon, and ranch seasonings!
