So I indulged yesterday...a lot. I went to a dinner party - the first one since my 14 day self-quarantine! I haven't been around actual people in so long that I seriously almost lost my voice talking so much. It reminds me of how I was every time I visited the states when I was living in Japan. I got so used to not speaking for so long, that when I finally could, it was at a mile a minute trying to push everything I had to say out all at once. I apologize to the others at this dinner as I am sure that I didn't let anyone say anything else over my babbling. But seriously, thank you for inviting me! It was so much fun!!

For those that were there and asked about it, I will post the peach cobbler recipe that I brought tomorrow once I sit down and write it up. It was so delicious! I've made it before and it's always a huge hit. The secret is to use farm fresh peaches when they are in season...well not really that big of a secret but it definitely makes all the difference.

Moving on, whenever I have an indulgent night of eating, I like to compensate with some healthy meals. Today that means using my air fryer again. My favorite thing to do is to make sweet and savory meals (reference back to my sweet and spicy salmon). Even better, is to use fresh seasonal ingredients for the punch of flavor. I scored a ripe mango at our corner grocery store - I had to really dig for it because it was all the way in the back hiding behind all the unripe mangos. So worth it! Mangos are miraculous things - they are super sweet and pair amazingly well with super spicy things. Such a great blend of flavors and I love using it in all sorts of recipes. I had some beautiful salmon filets in the fridge so I went with both for the perfect healthy meal. It feels tropical and indulgent but really, there's not much to it and it comes together quickly and the amount of flavor in it is phenomenal. I am trying to battle down that Quarantine20 every day because it is real and it is scary! You know that I know that you know what I am talking about!

Air Fryer Salmon with Mango Serrano Salsa


2 salmon filets, 1 inch thick

salt and freshly ground pepper, to taste

1 Tbsp avocado oil

1/2 mango, ripe and diced small

1/4 red onion, diced small

1 small Serrano pepper, finely chopped (you can use a jalapeño for less heat or remove the membrane and seeds or just use less)

2 Tbsp fresh cilantro, finely chopped

1 lime, juiced


  1. Combine the mango, red onion, Serrano pepper, cilantro and lime juice in a small mixing bowl. Set aside.

  2. Line your air fryer basket with some foil. Drizzle with oil and add a sprinkling of salt and pepper to the foil.

  3. Do the same with one side of your salmon filets (non-skin side) and place the salmon in the air fryer basket, skin side down.

  4. Cook in the air fryer at 400F for 8 to 10 minutes depending on the thickness of your salmon and your brand of air fryer. Check on it halfway to determine how much longer.

  5. Remove filets from air fryer and place on some brown rice (or quinoa or even a bed of salad).

  6. Top with the mango salsa and drizzle with my cilantro lime crema for an extra kick.
