Good afternoon ya'll! Well we had a very successful Diwali and Happy New Year and I can only hope that 2021 will be a vast improvement because I am way beyond ready for 2020 to end! I say that but some good was had in 2020 - for one, I started this blog and now when any of my friends or family ask for the recipe of something that I cooked, I can simply say - go to my blog and check it out! Woot woot! Also, really, there is no better feeling than to hear from friends and family that you don't really get a chance to talk to all the time, call you to let you know that they just tried a recipe from the blog and they loved it. Just gives you all the feels. Seriously.
Also, I have come to appreciate my own company a lot more. Sounds weird but life can tend to get so hectic and just loud sometimes. Being forced to stay home and come up with ways to keep yourself busy and entertained has definitely been a lesson in patience. The other side of that - I really appreciate the relationships in my life and getting out and doing things. So so so much appreciation. It actually was nice to be reminded of how much that togetherness that we all took for granted means to us.
Having said all that - pleasssse let it end soon!!!! I say that whiningly because Chicago just went into full on lockdown again and it is all seeming a bit never-ending. But we march on and keep going. To that end, after the plethora of sweets that I have posted last week, I need MEAT. A nice, hardy, unfussy meal that can be prepared in minutes and be absolutely delicious.
I bring you...air fried herby lamb chops! Lamb is not my go-to meat only because I am much more unfamiliar with it. Growing up in a Gujarati family, we really didn't eat any meat and even less red meat. I have had goat curry at Indian restaurants and found it pretty tasty but a bit gamey as well. Now that I primarily eat all meat in my diet, I am trying to branch out and these lamb chops just looked so good at the butcher in the grocery store!
I kept the marinade as simple as you can get. If you have fresh herbs, great. If you don't, use dried herbs. You will still get all the flavor with this. The one thing that I would suggest is if you are using dried herbs, rub them in your palm to wake them up and use less than you would the fresh herbs. Also, if you are not in the habit of taking your meat out to let it get to room temperature...it's time to change. It really makes a difference to get your meat to cook evenly!
After that, just coat it with the marinade and let all the flavor infuse in there. It's that simple and let's be honest, the air fryer does the rest!
Herb Crusted Lamb Chops (Air Fried)
4 lamb chops, at room temperature
1 Tbsp of olive oil
1 Tbsp of lemon juice
1 tsp of thyme
1 tsp parsley
1 tsp of dried oregano
1/2 tsp garlic powder
1/2 tsp freshly ground pepper
1 tsp of salt
Into a medium bowl place all the marinade ingredients in and mix well
Pat dry lamb chops with a paper towel
Coat all of your lamb chops liberally with the marinade and let sit at room temperature for 30 minutes.
Preheat your Air Fryer at 400F for 5 minutes. When done, place lamb chops into basket with some room in between.
Cook at 390F for approximately 15 minutes for medium rare (turning at halfway point). Check at the halfway point as each Air Fryer is different so you may need more or less time.
For perfect results, use a thermometer to test for doneness as the width of the lamp chop used can alter the cooking times (Lamb Doneness temperatures: 125 Rare, 145 Medium Rare, 155 Medium)
That's it! Let the lamb rest for a bit after you take them out of the air fryer and I like to serve these with roasted potatoes and a mint yogurt sauce. Delicious!!
So good guys! I really am going to start making lamb a part of my new line up. If you are eating a Carnivore diet like I am and are super strict about it, just use some melted tallow as your fat and salt to season it. It will still be yummy!
