Some days you just need a little something. On those days, I love making my super easy pancakes. My sister makes pancakes a lot actually because she has two little boys and they are picky eaters. She also works full-time and is a busy woman so I see her using the pancake mix each time and it hurts my heart. Now, I don't have kids and I have time to write a blog for fun so you can see that I have much more time than her (even though blogging is NOT easy and super time consuming but it's not work if it's fun right?!).
Back to my original point, I get it. Sometimes you just need to put food on the table ASAP and if it's something that the kid's will eat...that much better. I am a bit of a pancake aficionado (aka snob) so boxed pancake mixes just is never the solution. So I have finally found the perfect mix of easy and delicious homemade pancakes that doesn't require lots of fuss like melting and cooling butter or incorporating air into the batter, etc... This is as straight forward as you get and I use my top trade secret that I used when I made my cupcakes for my bakery. I dump and go...wet ingredients and then dry. Easy breezy. The trick really is in the mixing - as in don't over mix! Once you get that down, you will always have tender yummy pancakes.
Now, I don't really use sour cream a lot but it's one of those things that lasts awhile in the fridge and I end up buying for something and then have lots leftover. I actually use sour cream in my chocolate cupcakes so it's something that I do use for baking many times. Now, in these pancakes (like with my chocolate cake), you don't really taste the sour cream but it does add that bit of tanginess that you get from buttermilk and just adds the fat that you normally would get from belted butter. If you haven't tried it before, you should definitely give it a try and see what you think.
These are so fast and easy that I made a video to prove my point. I would even dare to say that they are just as fast as a box mix if you have your pantry organized and everything is in easy access. Spoiler alert: she does because I organized it for her!
Sour Cream Pancakes
INGREDIENTS: 1 cup milk 1/2 cup sour cream 1/4 cup sugar 2 large eggs 1 tsp vanilla extract 1 1/2 cup flour 2 tsp baking powder 1 tsp salt Butter for pan and pancakes tops Maple syrup
1. Mix together wet ingredients.
2. Add in dry. 3. Just mix until everything comes together...lumps are better than over mixing! 4. Melt 1/2 Tbsp butter on non stick pan on medium heat and add 1/3 cup batter. Cook until bubbles form. Flip and cook another minute. 5. Get in your tummy ASAP anyway you can get it there.
Toppings optional but highly suggested. Or not...you do you!
